It may be controversial, but it is not crazy: since 2013, when the UN pointed out edible insects as a powerful weapon in the fight against hunger, theses animals have fallen in the good graces of cooks, environmentalists, and public health scientists. Down to take the test, a Danish team of chefs and researchers traveled the world and talked to some of the two million people who have started consuming the insect delicacies.
